Super easy, one bowl, vegan chocolate cake

As I've mentioned before, chocolate cake isn't really my favourite kind of cake. I did love it as a child, but these days I like my chocolate straight up and my cakes filled with fruit and/or spices (or in raw cheesecake form!). Sometimes, though, chocolate cake is what I want. As Mr Bite always welcomes chocolate baked goods, I don't need much excuse to turn to chocolate baking when the whim does strike. Last week was such an occasion.

Still sporting a minimalist kitchen, I wanted a recipe that didn't call for much beating of ingredients (I don't have electric beaters, or even a proper handheld beater) or for multiple mixing bowls. When I saw a recipe for "The Best Vegan Chocolate Cake" on The Instructables, I knew I'd found my source. Alicia made the cake by combining ingredients in the tin she then baked them in. No mixing bowl! I was sold on that alone. You do need a saucepan for the chocolate glaze icing, but the glaze is so delicious that you won't mind licking it cleaning it afterwards.

Whilst I made a few adaptations to the cake, as listed in my version below, the basic concept definitely belongs to the original recipe. I highly recommend checking it out. The cake is moist, nicely chocolate-y, and keeps well for 3 days - which is probably as long as it will last.


Super easy, one bowl, vegan chocolate cake
A delicious vegan cake that you can whip up in under 30 minutes (minus cooling time pre-icing)
Makes a small cake to serve 6 to 8

Ingredients
For the cake -
1/2 cup plain flour
1/4 cup spelt flour
1/4 cup cocoa
1/2 cup caster sugar
1 tsp baking soda
Pinch salt
3/4 cup lukewarm water
1 tsp vanilla
1 tsp apple cider vinegar
1 tbsp vegetable oil
2 tbsp apple sauce

For the chocolate glaze icing -
1/4 cup caster sugar
2 tbsp non-dairy spread
1 tbsp non-dairy milk
1 tbsp cocoa

Method
Preheat your oven to 180'C (360'F) and select a square or round cake tin. Whilst this recipe makes a small cake, you will be mixing the ingredients in your tin so choosing one with reasonable depth would be helpful if possible.

Combine the flours, cocoa, sugar, baking soda and salt in your baking tin and stir to combine. Make a slight well in the centre and add the water, vanilla, vinegar, oil and apple sauce. Stir thoroughly to ensure the ingredients are fully combined (especially in the corners if you are using a square tin).

Bake the cake for approximately 20 minutes, until an inserted skewer comes out clean. Allow to cool fully before icing.

To make the chocolate glaze icing, combine all ingredients in a saucepan and bring to a light boil, stirring frequently. Reduce heat to low and continue stirring for a further 2 minutes (approximately). Remove from heat and allow to cool for 2 to 3 minutes, stirring regularly. If the icing cools too much and becomes too thick, return to heat briefly.

Ice, and decorate as desired.

  1. Looks so fudgy and delicious! I will take bar chocolate (the darker the better), or cake, or chocolate any other which way. What can I say =] I am loving the minimalist recipe though. I tend to be guilty of overcomplicating recipes. Usually it is with good intentions, but I still think simpler is better!

    1. I get caught up in the over-complicating approach too sometimes. I like those recipes too on occasion, but more often than not, I want to eat the finished product without going through arduous steps!

I have been pretty constant with my love of chocolate cake - it is still my favourite (was v sad today to go out for lunch and not have room for the vegie bar's great chocolate cake!) and I know the one you have here though I have never made it in the tin - I think of it as food co-op cake because that was where I first encountered it as a student and it is a great cake - I can imagine if you loved chocolate cake as a kid then it brings great comfort when you are far from home.

    1. In those situations (when too full for dessert), I inevitably buy the dessert to take home! This is definitely a childhood kind of chocolate cake - not a dense gateau that I associate with adult desserts. It needed some smarties on top to really drive that experience home though ;)

    2. we never had smarties on our childhood chocolate cakes - that would have been too fancy - on a celebration there might be a few 100s and 1000s but how I loved looking at cakes with lollies on them. alas the other week when I prettied up a chocolate cake with m&ms I think the reason I dropped it on the floor is that I was so excited - just shows that simplicity is sometimes best :-)

    3. I can understand your recent excitement - the once a year excitement that smarties on birthday cakes (well, a few times a year, due to multiple family members) was enough to induce advance hyperactivity as well as the actual, post sugar rush type!

  9. I swear vegan cakes are always the best cakes lol - I'm a firm believer than eggs dry cakes out!
    Always love a piece of chocolate cake - i'm not particularly an icing fan though!

    1. Definitely! Vegan cakes are always so moist! I used to think it was the use of vinegar in so many recipes, but not all recipes call for it, so your egg theory could well be it!
