This sweet potato and strawberry smoothie is one of my favourite new creations. It makes a nice change from green smoothies and bananas, both of which feature in my smoothie routine regularly (and often together). The sweet potato provides a creamy texture and slight sweetness, which the strawberries enhance beautifully. Of course, it also means that you are still getting a hit of vegetable nutrition despite the lack of greens.
Much as I like the NutriBullet, you don't actually need a high powered blender for this. All of the ingredients are soft, so any blender should work, although you may want to de-hull your strawberries if you are concerned they won't be adequately blitzed. You will, of course, need to allow time to pre-cook sweet potato, but I find it easy to throw an extra potato or two in the oven if I am baking some for dinner.

Ingredients
1/2 cup cooked, cooled and mashed sweet potato
1 cup strawberries (I left mine whole and with stems on)
1/2 cup chilled almond milk
1/2 - 3/4 cup cold water (or more milk if preferred)
1 tsp chia seeds
Method
Combine all ingredients in a blender, and blend until smooth.

Sounds delicious - I've never thought to leave on strawberry leaves but it makes sense. We have been having strawberry, pear and banana smoothies this week - I'd love to add in sweet potato or pumpkin but need to move softly softly with such things with sylvia. By the way I was amused at the Age's headline for the heatwave in Britain - 'Britons brace for a (sort of) heatwave"
ReplyDeleteThat Age headline is perfect :-) I am quite amused by what constitutes a heatwave here, but at the same time, I am always amazed how much hotter 30'C is in a big inland city like London compared to the coastal (and not very humid, mostly) capitals of Australia. 30'C really does feel very uncomfortable, especially without air conditioning being standard! Thankfully, 30'C is also tipped to be the hottest summer gets, and probably not happen very often, so it is manageable in that context.

I think it's getting to the stage that I could put sweet potato in pretty much anything! It's such a versatile vegetable :-)

ReplyDeleteDoes it make you feel better to know my last blender was basic in all senses of the word?! However, I honestly think even that would have coped with making this (probably minus the strawberry stems) so I hope your own blender gives a smooth result that your children enjoy!
