Plum and oat bars

I don't know what the weather is like where you live, but it is starting to feel very autumnal here. Technically, autumn (fall to Americans) starts in England on the 23rd September, but there is a new crisp to the air that suggests summer is fading fast. Having loved the recent summer - such a change to my dread of Australian summer heat! - I am sad to see the long days end. At the same time, autumn brings its own delights and I am happy to embrace them as they unfold.

 


Plums are one star of autumn and they are showcased nicely in these oat bars. Featuring plums, cinnamon and raisins, they are delicious without being complicated. These can be breakfast or snack bars and if you want to add a touch of decadence, a drizzle of chocolate (or addition of chocolate chips) could provide that too.


I made these with pureed plums, which gave most of the moisture content. Depending on the size and yield of your plums, you may need to adjust the wet ingredients to give the right texture. However, oats are very forgiving, so I suspect you can get away with a bit of variation in the batter. Use your judgement!

An autumnal snack or breakfast
Vegan
Makes 8 bars

Food processor or blender needed

Ingredients
6 medium plums
1-1/2 cups rolled oats
1/4 cup raisins
1/4 cup rice malt syrup or other liquid sweetener
1 tbsp melted coconut oil
1 tsp cinnamon or mixed spice
1 tsp vanilla

Up to 1/4 cup non-dairy milk of choice, if needed

Method
Preheat your oven to 160'C (320'F) and prepare a rectangular cake tin.

Remove stones from the plums and then puree in a blender or food processor until fairly smooth (they don't need to be perfectly smooth). 

Combine the pureed plums, oats, raisins, rice malt syrup, coconut oil, cinnamon and vanilla in a mixing bowl. Stir to combine. The batter should be fairly thick, like a thick muffin mixture. Add milk if needed, to thin out.

Transfer the batter to your prepared pan and bake for approximately 16 to 20 minutes, until golden on top and firm to the touch. Allow to cool fully before slicing into bars.

  3. We had some chilly weather last night, which really has me thinking that autumn is coming! Must make the most of the late summer produce like this while we still can!

  4. When I see plums in the shops, it's always a sign that summer must be coming to an end. A few days ago it was 24C here in Sydney and on the weekend it's supposed to get to 26 and 27C. I'm embracing it warmly - we've had a very long and cold winter. Your bars are a lovely way to start the day xx
