No bake peanut butter energy bites (4 ingredients, vegan, and no food processor required!)

It's all very well me raving about my new (second hand) large freezer, and baking muffins in bulk, but I know that many of you are in the position I was in a few months back: freezer space is at a premium. Plus, sometimes you (I) want a snack or treat without having to do much. If you're in Australia, you (I) may also want a snack or treat without having to turn on your oven.

These no bake peanut butter energy bites are the perfect solution.

I clearly wasn't in the mood for even cutting.


So simple that they hardly need a recipe, these bites are also amenable to modification. Have a different puffed cereal to hand? No problem - swap away. Want to make things more sophisticated? Almond butter and cranberries would be a festive twist. In a chocolate mood? Throw in some cocoa, or chocolate chips.

I don't think you can go wrong.


No bake peanut butter energy bites
Vegan and very, very easy!
Makes 8 - 12 squares, depending on how small you cut them (I cut 10, unevenly)


Ingredients
1 cup puffed rice
1/4 cup peanut butter
1/4 cup currants (small raisins)
3 tbsp black strap molasses

Method
Combine all ingredients in a large mixing bowl and stir well to combine. 

Line a square or rectangular baking dish with non-stick baking paper. Transfer the peanut butter mixture into your dish and press down. Refrigerate for at least 2 hours before slicing and serving.

Store in the fridge.



I imagine these would keep well in the fridge, but I'll confess to not letting them last long enough to find out.

  1. I think I will have mine with chocolate chips and some almond butter so I can share them with sylvia and perhaps a little less molasses (I usually use another sweetener with molasses as I find it a bit too bitter)

    1. Your version sounds lovely. I don't find molasses bitter, but do agree it has a strong taste - possibly an acquired one too!

  2. Perfect cutting if you ask me. Some want a big bite and some don't. Take your choice. I like sweet bites that don't require me to turn on the oven.
