Magical everything chocolate pudding (vegan, raw, 100% whole foods, and refined sugar free)

I like to think that I'm honest about my vegetable dessert experiments that don't quite work. The green ice cream I made with spinach? Probably not for everyone. That (best forgotten) chocolate mint fudge with cauliflower? Clearly a disaster.

As for this chocolate pudding, though? Trust me when I say it's a vegetable containing dessert that you want to embrace.



This recipe is what happens when you have a vague desire for a kale-containing green smoothie, you realise you have an avocado on hand to use up, and then you want a kale-containing green smoothie and chocolate avocado mousse.

It's what happens when you embrace the modern woman's motto of "I can have it all", and you decide to have a kale-containing green smoothie and chocolate avocado mousse and to have them together. 

And, it's what happens when you put fruit and vegetables (and cocoa!) into your food processor and magic takes over.

I recommend the outcome as a blissful mix of delicious taste and whole food nutrition.



Magical everything chocolate pudding
Serves 1 - 2
Food processor or high speed blender required.
Vegan, raw, and happiness inspiring.
Honestly not quite the same as any of my previous chocolate avocado puddings!


Ingredients
1 medium banana, frozen (non-frozen would be fine but the pudding won't be as creamy)
Flesh from 1/2 medium or 1 small avocado
~1/3 cup strawberries, hulls removed
~1/3 cup kale, chopped (you can't taste it in the pudding, I promise)
2 dates
2 heaped tbsp cocoa powder (raw if desired)

Method
Put everything in a food processor, and process. Serve immediately or allow to chill in the refrigerator first.

  1. Mmmm this sounds and looks so creamy+delicious!!! I love it when I'm able to throw things together and end up with a miraculously successful recipe--but of course, that doesn't happen all that often--it seems to come and go in seasons, haha. I really want some of this pudding right now but the only bad thing about processing things is that now I have to be mindful of the time because Selah might be sleeping. :P I hope you have a beautiful day, Kari!

    1. I'm glad I don't have to worry about waking anyone up with my processing! Sometimes it isn't ideal for Mr Bite, but I figure he can cope ;)

  4. mmm that is challenging but it is good to know that a kale dessert can lead to such bliss - and I think that is healthy enough to have dessert for dinner with no guilt (actually it is probably healthier than a lot f people's dinners - probably even mine!)

  5. The avocado+chocolate combo, I've seen before but the kale addition is new to me! I'm super impressed that it works and isn't too...green flavored!

  6. This sounds like something they would serve at that cafe I went to with Arabella. How delicious. I love how it has banana and strawberries in it to give that sweetness but also all the greenery for the health kick xx

    1. Ooh, exciting! I have a KitchenAid 12 cup food processor and I love it. I bought it 2.5 years ago (http://www.bitesizedthoughts.com/2011/04/introducing.html ) and haven't had any issues. They are expensive things though so I know it's a big decision!

  8. I love recipes like these! They taste awesome and indulgent and still are good for you! I wish avocados weren't so expensive here, I hate using them in smoothies/puddings when I love them plain!

    1. If I liked them plain I would probably feel the same (I'm a bit like that with mangos, which I love plain and so dislike 'wasting' in recipes!). Fortunately we have periods where they are quite cheap here, mostly around this time of year (summer) so it makes it a bit more affordable :-)
