Holding that in mind, this is a brief post to showcase some of the simple meals I've been throwing together to use up produce. Whilst we can transport our kitchen ingredients down the road, the less to move the better!
Butter beans with mixed vegetables and pineapple, with spelt flour flat bread.
I liked this, but unlike the pineapple in my hot and sour stir fry, the pineapple seemed like a rogue ingredient instead of a star feature. However, the dish helped use up a tin of beans (I often use dried so tins can sit in the cupboard for a while), a tin of tomatoes, quite a few vegetables, and a good chunk of flour.
Frozen banana soft serve with cocoa nibs and Choc Shot chocolate sauce.
The cocoa nibs and chocolate sauce don't really need using up, but frozen bananas are not ideal for transporting and this took 2 large ones and produced a delicious dessert.
Kale, sweet corn and sweet potato on toast with almond butter.
This dish is self explanatory really. I loved the bright colours and flavours.
Random mixes.
After enjoying cocoa nibs and chocolate sauce in frozen banana ice cream, I've also added them to yoghurt and on top of strawberries. On other occasions I've had raisins in weetabix and all manner of vegetables in jacket potatoes. And, I suspect there will be more strange combinations before the week is out...
Please tell me - how do you get through moves? Any last minute tips?!

ReplyDeleteGoodness it is so long since I moved house it is getting embarrasing but I think your random meals sound great - I think I also cope by having some tins of beans and a tin opener on hand (that is my answer to most culinary emergencies). Good luck with the move - hope having moved country not so long ago that this feels easier
ReplyDeleteThanks Johanna - I was hoping it would feel easier moving within the country but I think I have moving fatigue as it wasn't so long ago we finished unpacking in London! It is worth it now we're here though (although there are still many boxes to unpack...).

I can totally understand wanting to eat up everything in your pantry instead of packing it into boxes. I'm about to clean out my pantry because it's on the verge of exploding and once it's all sorted, we'll be eating up all the bits and pieces xx
