Sweet potato, raspberry and avocado flapjacks

These are not your typical flapjacks. Most, after all, do not involve avocado. These are also less sweet than a standard flapjack mix and more colourful.

Whilst these are unconventional, they are tasty. The avocado stands in for butter / margarine but doesn't overwhelm in flavour (I couldn't detect it at all) while the sweet potato and raspberries work in harmony to provide subtle sweetness. The only other ingredients are oats, vanilla and (non-dairy) milk. It is a simple and effective mix.

These were a big hit with Mini Bite, although are not the neatest of foods for a toddler to consume on the go. I am happy to embrace the mess, though, when it means she is eating well.

My flapjacks were a little too soft, as the cooking time was truncated after I burnt my hand on the oven tray and wanted to be finished with baking. I have advised a longer cooking time in my instructions below. I also advise not burning your hand!

Sweet potato, raspberry and avocado flapjacks
Vegan, whole food, simple and tasty - a perfect snack or breakfast on the go
Makes 12 or so flapjack slices

1/2 cup cooked and roughly mashed sweet potato (approximately 1/2 medium sweet potato)
1/2 cup roughly mashed avocado (approximately 1 small avocado)
1-1/2 cups rolled oats
1/4 cup soya milk or non-dairy milk of choice
1 tsp vanilla essence
3/4 cup raspberries (approximately 1 small punnet)

Preheat your oven to 180'C (375'F) and line a loaf tin with non-stick paper.

In a large bowl, combine all ingredients except the raspberries. Mix well to combine and then fold in the raspberries.

Transfer the mix to your prepared tin and bake for 20 - 30 minutes or until golden and firm to the touch. (Note - I cooked mine for 20 minutes but this was not quite long enough as the bars were still soft on cooling.)

Allow to cool fully before cutting into slices.

  2. Very clever and like how the flavour combo works. I would run out and make these now, had I had sweet potatoes in my house, but its the first time I do not and yet I have all the other ingredients inc. raspberries from the garden, I will give these a go though. Hope you hand heals, I have a terrible tendency to burn my wrists when lifting things out of the oven

  4. ouch - how annoying to burn your hand and distract you from cooking - these sounds really good - though I wish I could convince sylvia to eat these sort of flapjacks! Imagine mini bite looked quite cute eating them.
