Mango 'ice cream'
Ice cream without cream and sugar? Oh yes. No one will know that this is almost entirely fruit!
Serves 2
Ingredients
1 large banana, peeled and frozen
1 medium mango, peeled, chopped and frozen
About 1/4 cup (2 decent dessertspoon dollops) plain yoghurt*
1 tbsp coconut, optional
*I used homemade natural non-fat yoghurt. I would recommend pot-set or Greek, for maximum creaminess.
Method
Add all ingredients to a food processor and blend to combine.
Serve immediately, for soft-serve ice cream, or freeze in individual serves covered with cling wrap, for a sorbet-like product.
I had half of this straight from the food processor (above), and froze half to eat the next day (below). I thought that the re-frozen half may turn icey and solid, but it worked surprisingly well. After 1 - 2 minutes out of the freezer, it was fine to eat with a spoon.
I'm amazed at how well this worked. And with the simple ingredient list, you can even serve it for breakfast.
I know this because I did.
It was a great start to the day!

A healthy bowl of ice cream for breakfast has quickly become my favourite way to start the day! At least in summer - I think I'll have to let my smoothie-fruit thaw overnight come winter time. This ice cream looks really delicious - yogurt is a great idea.

ReplyDeleteYou know, it doesn't really. I was debating whether to call it 'mango frozen yoghurt' instead of mango ice cream, as the former would have been more accurate really, but it didn't taste of yoghurt to me. I suppose it has the lower sweetness I associated with frozen yoghurt though.
DeleteOh this looks so good, and yet my loathing of bananas means that it will never be for me. Shame, they seem so versatile.
ReplyDeleteIt does seem very sad! I suspect this could work with extra frozen mango and no banana, but it would be less creamy. Frozen pineapple might work too?
DeleteAm still determined to try the banana and raspberry but am not so keen on the mango - though now you have me thinking this could be done with so many fruits - then the main challenge is remembering it is in my freezer
ReplyDeleteThe raspberry one is still highly recommended :) You're right, though, half of the fun here is realising how much scope there is for frozen creations. I suspect a lot of variations would work really well.
