Fruity breakfast quinoa

I know not all of you are into quinoa, never mind quinoa for breakfast. However, if you do like the grain then this is a pretty wonderful way to enjoy it. And if you don't like it? It could be an entry into starting to! This dish pairs quinoa with almond milk, pear (or apple), blueberries, vanilla, spices, sultanas and almond butter. There is a lot to love.

I used pre-cooked quinoa for this, because I tend to cook quinoa in big batches. Thus, the quinoa was cooked in water ahead of time and then cooked through again with almond milk for this dish. If you were making this from scratch you could just cook the quinoa in milk.

I intended for this to be a hot bowl, and I ate the first serve that way. However, I later tried some cold and almost liked it better in that form. Experiment with what works best for you. It is a great option for making up in advance and taking for breakfasts at work, as it keeps well in the fridge for a few days after cooking.

Fruity breakfast quinoa
A blend of quinoa, spices, vanilla and almond butter - with bursts of sweetness from sultanas and fresh fruit
Vegan and gluten free
Makes 2 decent serves

2 cups cooked quinoa (see my comment above if cooking quinoa from scratch)
2/3 cup unsweetened almond milk
2 tsp vanilla essence
2 tsp mixed spice (pumpkin pie spice), or, 1 tsp cinnamon + 1/2 tsp each of nutmeg and cloves
2 tsp almond butter
2 tbsp sultanas, currants or small raisins
1 pear or apple, chopped
3/4 cup blueberries or other berries

Combine the quinoa, almond milk, vanilla and mixed spice in a saucepan and stir over medium heat. Allow to simmer for 3 or so minutes.

Add the almond butter and fruit and stir through. Keep over low to medium heat for a further 3 or so minutes, and then serve.

I love quinoa but am not sure I could eat it this way - though I also think I should try it - we have been eating chocolate muesli and I would really like to try some quinoa in the muesli - also curious - do you keep the batches of quinoa you precook in the fridge or freezer? I did a big batch of brown rice the other day which was great

    1. I occasionally freeze individual serves, but most of the time cook 4 or so portions and just keep it in the fridge over the week (Mr Bite doesn't eat quinoa so the 4 portions would just be for me).

      Chocolate quinoa porridge would be delicious also!

  2. I've been on a chia pudding kick recently, but I feel myself wanting to try something new in the near future...I think quinoa breakfast bowls might just be IT!

  5. This looks amazing. Breakfast at the moment is at the whim of the toddler - I let her choose what she is having and I make myself the same so that we don't have food arguments. She swings between sourdough toast with vegemite or muesli. I like both options but perhaps I could introduce her to quinoa porridge for an alternative :)
