Candle Cafe's vegan pumpkin cheesecake


Pale tangerine offset by ruby red
And studded with pepita jewels
Cleaved by fork; ethereal lightness
Beauty and perfection.

Anticipatory first bite, and then!
Eyes open and taste buds dancing
Flavour and texture evolve, dissolve
Balanced contemplation.

Faint pumpkin, warm spices, sweet creaminess
Cinnamon-nutmeg-ginger-cloves?
Tart cranberry in gleaming contrast
And well-partnered delight.

Satisfying beyond imagining
Epitome of vegan bliss
Also, as served, well balanced in form;
Golden dessert dinner.

I am not often moved to poetry by food (which is just as well, given the quality of my poetry), but this vegan pumpkin cheesecake from New York's Candle Cafe demanded it. 

The best part? I'm not just taunting you with food memories - I'll be back in my next post with a recipe for how to make a version of your own.

    1. I actually don't like regular cheesecake much, so it was a revelation to discover vegan varieties. I adore them!

  6. It's hard to believe it's possible to make a vegan cheesecake. The very word, 'cheese' would surely make it seem impossible. And that cheesecake looks so authentic. I can't wait to see your recipe. And that was a fantastic poem - I'm hopeless at poetry xx

My sister's boyfriend recently had a mini rant about this very topic - she took him down to The Raw Kitchen and when he saw their raw, vegan cheesecake he thought it was completely wrong to label a dessert that when it has no cheese. I can see his point, but after he'd tried their desserts, he decided to forgive them ;)

      This is a long winded way of saying that this, as you rightly guess, has no cheese but does still do a rather wonderful job of being cheesecake like in all the ways!
