Raspberry carob mousse

First, thank you to those of you who shared your thoughts on my last post. I really valued your comments and perspectives on what is an incredibly complex topic. It certainly seems like we can all agree there's no easy fix!



Today, we have a recipe that I like to think of as healthy in a 'big picture' sense. On the one hand, it's a dessert, and it has avocado (so, you know, fat), and it looks quite decadent. If you're counting calories, it's going to have more than a diet, artificially sweetened, gelatin containing mousse tub. On the other hand, it is full of natural ingredients, is made from whole foods (and mostly fruit), is vegan and high raw, and is the sort of food you can eat a moderate serve of and feel very satisfied from.

Of course, I'm not posting this because of any of those possible health benefits. I am posting this because it tastes good and it's easy to make. And for those of you who don't like carob? Just substitute in cocoa. I nearly made carob and cocoa versions for myself, just so I could try both options. Given that I didn't - please let me know if you try a chocolate option. I'd love an excuse to make this again with that variation!


Raspberry carob mousse
You can make this and sit down to enjoy it in under 10 minutes.
Vegan and high raw.
Makes 2 to 3 serves.

Ingredients
2 small avocados (mine weighed about 120g each with skin and stone)
2 cups frozen raspberries (fresh would also be fine, of course)
1/2 cup carob powder (or cocoa powder)
1 tsp vanilla

1 - 2 tbsp liquid sweetener (agave / maple syrup), optional and to taste

Method
Place everything in a food processor, and process until smooth.

Chill before eating, or just eat straight away.

  1. sounds delicious - not at all the weather for such desserts here but I think this summer must be my summer of chocolate avocado mousse. It just sounds so good

    1. I have a tendency to eat summer desserts in winter in front of the heat. It's terrible for the environment, but rather a wonderful experience for me! With that said, it's somehow already halfway through winter, so there's not too long to wait if you hold off for summer.

  2. Mmm, I've never made avocado chocolate pudding with raspberries before, that sounds awesome! As for the weekend question, booked solid! Which is awesome, since I'm only here for another month before moving, and I want to get in as much friend time as possible. :)

    1. More sweetener for you of the 90% cocoa chocolate?! Mind you, if I'd made this with cocoa I think I'd have needed more sweetener too. With carob I found it spot on, but modifications to taste are one of the benefits of this kind of mix :)

  5. Ahhh I just checked out your last post and we're pretty much in the same spot in the US, as I'm sure you know. I personally don't think there's any good fix for the older generations, but we do need to start changing things for the kids!

    Love the sound of this mousse! I'd take this over one of those weird diet artificial things any day!

    1. Changing things for the children has to be where we go - if we fail this next generation we are really doing terribly! I do worry that we're going to though :S

  8. That's a lovely looking mousse, Kari. I think chocolate and raspberries go so well together. I normally never make mousse or order it at restaurants because I find it so rich. I think this mousse would be perfect for me xx

    1. I loved 'proper' mousse as a child but these days am put off by the amazing number of eggs that commercial versions contain! This version is simpler and easier - I hope you enjoy it if you give it a go.
