Pikelets with all the things (quinoa flakes, hemp seeds, apple and strawberry)

I'm starting to see that blogging for multiple years can, over time, result in the posting of recipes that are similar to recipes one has posted before. In other words, I'm getting repetitive.

On the weekend, we had no-bake banana bread bites that were a twist on my no-bake chocolate brownie bites. Today, we have pikelets that are really very similar to the strawberry, oat and quinoa pikelets that I posted just over a year ago.


Why am I sharing this recipe with you when it is so similar to the previous version (and, what is more, I have three other pikelet recipes on my blog)?

In short, because I loved the outcome. I want to tell you about these so that if you have a pikelet (small fluffy pancake) craving, you can indulge with some inspiration from here if you so wish.

Telling you about the pikelets also gives me an opportunity to tell you about my weekend. I made these after running a 12km fun run yesterday morning, and I can say with some confidence that warm pikelets are one of the best ways to re-fuel after such an event.

Around running and pikelet eating, we also attended a party to celebrate a Great Uncle's 95th birthday, his wife's 92nd birthday, and their five year wedding anniversary. Five years ago, at their birthday celebrations in 2008, the couple in question surprised guests by turning their birthday party into an impromptu wedding. No one knew it was coming, not even their own children. I love that story. Five years later, they are very happily married and live a very full life for a couple aged 90 plus.

Finally, last night, we  fulfilled our outstanding Christmas 'voucher' by babysitting our nieces and nephew while their parents went to the movies. They were perfectly behaved. So much so that they went to sleep promptly and left us wondering how to fill in the remaining time until their parents returned! It's been a while since I have babysat - always bring a book.

In all, it was a busy weekend but a highly satisfying one too. These pikelets were a perfect accompaniment.


Pikelets with quinoa flakes, hemp seeds, apple and strawberry
Makes 12 small - medium pikelets
Vegan and low fat
Slightly adapted from my strawberry, oat and quinoa pikelets 
(which don't have hemp seeds and do have oats)


Ingredients
1/2 cup self-raising flour
1/2 cup quinoa flakes
1/2 tsp bicarbonate soda
1 tbsp hemp seeds
1 cup milk (I used almond)
1 small apple, peeled and diced
1/3 cup strawberries, chopped

Oil spray for pan

Method
Combine the flour, quinoa flakes, bicarbonate soda and hemp seeds in a large mixing bowl.

Add the milk, apple and strawberries to the dry mixture and mix through. 

Heat a non-stick pan over medium-high heat and drop heaped spoonfuls of mixture onto the pan. I did 3 pikelets at a time. Cook until bubbles start to appear (~1 minute) and then flip and repeat, so both sides are browned. Repeat for the other pikelets.

  1. Yay, another way to use quinoa flakes!!! Could I just use plain flour and put some baking powder in?

    1. Yes, absolutely! I have done that before with no problems. I've also used quinoa flakes in all sorts of pikelet recipes and they work really well :)

  2. I think it's only natural to make SOME repeat-ish recipes after so much time! And really, can one ever have too much of something so delicious? Love this take on pikelets!

  4. I feel like having a blog makes me more original because I'm trying to do things differently but I definately see a pattern with the unblog related things I make. I sometimes just don't blog them! Love these :) I did pancakes this week too!

  5. I find blogging similar recipes quite interesting because I can track the development of some dishes that I make - and likewise on other blogs - sometimes seeing that recipes can be made many different ways is quite liberating.

    Your weekend sounds great and those pikelets look fluffy and delicious - I am
    just making a yeasted pikelet but yeast is a fickle beast so it is taking longer than I hoped.

  8. Pikelets. What an adorable name! I would like a pikelet, please ;). Wow! 95th and 92nd birthday? That's amazing. I loved reading about their surprise wedding! How they managed to keep from telling the whole world is beyond me. But then again, I'm no good at keeping secrets..esp the good, exciting ones. According to Tim, I don't have to say anything as my face says it all. I gotta work on that I suppose. You have such a lovely family!

    1. I don't think I could pull off the surprise either - I'd burst with trying to keep it to myself. It is such a lovely thing for them to have done though. And yes, pikelet is such a cute name!

  9. Oh yeah - I totally find myself doing many "versions" of a particular recipe.... it's all part of the creative process I guess - especially with baking - if you find a method that works, then you can tweak for different flavours/combinations.

  10. These pikelets look and sound delish - I don't think you can have too many pikelet recipes. Congrats on completing your fun run. I went to see Flower Children and the MSO on Saturday, and shopping and to see Haute Cuisine with a friend on Sunday.

  11. I didn't know you could make pikelets without an egg. Was your great-uncle in a relationship with her for a long time before they married? That certainly wouldn't have happened back in their youth! xx

    1. I know! They were both married previously - he was widowed and she was divorced - but were then together for a bit before they married. They met in their retirement home :-)

      Pikelets without eggs are surprisingly versatile. Chia seeds or hemp seeds work as a binder and the rest seems to take care of itself!
