Bookmarked recipes I've made - Part 2

A few months ago I posted 5 dishes that I had bookmarked and then made with virtually no adaptations from the original recipe.

Here is the next edition!

Eggplant cutlets from Clean Green Simple

I used regular flour and only needed about 1.5 cups breadcrumbs instead of 2 (I used Anchor brand), but otherwise followed the recipe for the cutlets exactly. I skipped the 'cheeze' sauce but added regular grated cheese to Mr Bite's version. We also used commercial tomato salsa.


I was really impressed with these - they tasted wonderful and the crispy coating was extremely enjoyable to eat. I froze half of the batch and they also re-heated well (in the oven) from frozen. The only downside is that they really do need to be cooked and re-heated in the oven as microwaving turns the middle soggy.


I will definitely be making these again and am keen to try the coating on other things too - tofu, for instance, or other vegetables.

We served ours with noodles, and the dish was certainly delicious.


Amazingly, this was also the first time I've prepared tofu and had Mr Bite report liking it. Genuinely, I'd like this again, like it.

There was a catch though: me. I liked this tofu less than when I simply grill or stir-fry it. This wasn't a huge surprise because I don't really like a 'skin' on my tofu, and eating it fried is thus not something I do often. I still enjoyed this though, and the overall dish outweighed the slight tofu disadvantage.




I wanted to mention this side dish as it was one of the options on my Christmas recipe list that I didn't end up making for Christmas. However, I have somehow managed to delete or lose the photos, so apologise for that and the absence of images!

I should probably state upfront that I don't usually like glazed carrots. I'm not generally a fan of any sweetened vegetables, and I think carrots are pretty perfect on their own. However, I did like the look of this glaze and it seemed like an easy way to make our meal more exciting.

Sadly, I didn't end up liking them. Given my taste preferences, this is probably not too surprising. Mr Bite wasn't a fan either though, and he does like regular glazed carrots. I guess something about the combination didn't quite work for either of us. I'd be curious to know if others have tried and liked them, though, because it seems like I should have enjoyed the dish and I'm wondering if something went wrong in my preparation?



This, as one might deduce, was made just this week. I put my exciting weekend kale discovery to good use.


This recipe explicitly calls for Tuscan and not curly kale. However, I wasn't in a position to be fussy  and so curly kale it was. 



I followed the dressing ingredients closely, but reduced the quantities to match 1/2 head of kale, omitted the garlic, and used sweet chilli sauce instead of chilli powder. Thus, I also didn't add the sugar. I did use the optional nutritional yeast.



I was apprehensive before trying this as kale had a big reputation to live up to - but I liked it. I can see that kale is definitely a vegetable to have with something, and it may be the only time I'd want salad dressing on my salad. The flavour combination worked well in this case and I'm now looking forward to comparing raw kale with cooked.

After all of those vegetables, though, I think it's time for dessert...

Hannah's Raw Brownies with Chocolate Icing of Pure Amazingness featured in my last recipe round up. I loved those, but I loved these even more. I found them slightly less sweet than the first variety and I adored the carob in them.


Interestingly, though, despite my enjoyment of the carob component, they didn't taste strongly of carob per se. It was like a caroby-chocolatey-maple-syrupy mix. A swoon-worthy one. One I think even non-carob likers might like.

I can't comment on that, though, because I ate my batch all by myself.

  1. Aw!!! SQUISH! I like the carob ones more myself, and agree that they're less carob-y than malty-nutty-chocolate-y-maple-y amazingness (if I do say so myself :P ) Thank you!

    1. Malty! That's the other flavour that I couldn't quite decipher. Isn't it amazing how wonderful they turn out with such straightforward ingredients? Magic I tell you - thank you!

  2. I must try the maple syrup brownies but don't know if I can do the carob! I found the honey a bit sweet. Love matthews delicious tofu. Never been brave enough to eat raw kale. Highly recommend the tofu nuggets that Sylvia and I love making - though I still need to experiment with them - the batter worked very well with cauliflower too.

    1. Tofu nuggets are something I need to go back and experiment with again. My first (and only) attempt was very messy! I think we would both like those though, so definitely something to try.

      Raw kale with dressing was surprisingly ok! And I'm sure you could do the maple syrup brownies with cocoa instead of carob?

  3. I'm so pleased that the tofu was appealing to Mr Bite and that you liked the overall meal. My husband is still a bit hit and miss when it comes to tofu, most of the times he loves it but on occasion he won't enjoy it and I haven't quite worked out the good from the bad. I made Matthew's delicious tofu again recently and we all weren't as keen on it as we had been initially, not sure why though...

    1. Thanks Mel - it was a really good meal. Interesting your recent version didn't quite work as well though! Isn't it odd how those things can happen? It's particularly disappointing when it's a meal you loved the first time around.

  4. What a delish collection! I actually made those eggplant cutlets, too! Honestly I wasn't in love with them...mine needed more flavor! I proably should have used panko instead of ww bread crumbs. I've recently made Daily garnish's salad dressing, Fat Free Vegan Blog's lite green goddess dressing, OSG's cookie dough bites and Clean Eating Chelsey's spinach artichoke chilli! MMMMMMM

    1. I imagine the breadcrumbs would make a big difference to the cutlets! Our brands are a bit different but the one I used was good.

  6. I realised this morning I have not actually cooked dinner at home this week. In fact I don't think I've cooked a proper meal at home in almost 3 weeks!!! The wonder of random meals out, eating at S's place, eating at my parent's place etc. All your beautiful meals make me want to get cooking. Those eggplant cutlets look particularly nice. Mum sometimes cuts zuchiini in half, crumbs the cut side, gives it a quick pan fry on the breadcrumb side then bakes - delicious.

    1. I like the sound of zucchini in that form - I'll have to try it! I am discovering more and more how versatile zucchini is.

      I definitely go through stages of minimal cooking too, or what I call 'lazy' cooking which has an over-reliance on bought veggie burgers and the like :p

  7. I have way to many bookmarked recipes that I've made and still have yet to make! Sometimes I wish I had a large family living in my house so they could accommodate all of the treats I want to make :)

  8. Ooh, those brownies! And what perfectly crumbed eggplants. And kale salad! I've only ever had the other kind, and only ever cooked, but I am very intrigued now to try out raw kale. I might have to bookmark some of these...

    1. I think I might like kale better cooked, but I did like it in this format too. I hope you enjoy it if you do try it raw. And I definitely recommend the brownies! (And everything else in this post for that matter, minus the carrots!)

  9. Kari I wouldn't touch curly kale raw, unless it was super duper young It could be giving your jaw an incredible work out. Try to get hold of the other darker greener one though, and the smaller/younger leaves the better. The raw leaves then can be really sweet and delicious.
    As for those eggplant cutlets...yum!!!

    1. But I liked it! I am guessing mine must have been very young as I didn't find the leaves too tough after they'd been massaged with the dressing? (I didn't eat the stems.) I will definitely be keeping an eye out for the darker green one though; I'm sure it will have to appear in my life one day!
