Spiced courgette fritters

Life is returning to normal in the Bite-Sized household. My parents are now back in Australia, we are all back at work and nursery, and Christmas feels a long time ago (and Spring a long time ahead).

In the middle of winter, it can be nice to eat summery foods as well as relishing warm stews, soups and porridge. These fritters offer a summer feel whilst still being hot and comforting. The only downside is that they are best eaten straight after cooking, as they go a bit soggy if stored over multiple days.

Herby lemon and pea fritters

At the risk of tooting my own horn, I am rather proud of these fritters. I made them on a whim, without a recipe, and surprised myself with how well they turned out. They taste of spring: fresh, lemon-y, light yet satisfying, and a little bit fluffy.


These take some of my staple ingredients (like besan flour and chia seeds) and give them a new twist, thanks to the lemon and fresh basil and parsley. The fritters come together quickly and make an easy meal if paired with salad. 

I used mashed sweet potato in these, but in future I would probably use regular potato. You can't really detect the sweet potato flavour and potato seems a better match for the other ingredients. However, either would work and you could even try mashed squash or celeriac.


I think these are best warm from the pan, but they will also keep for a few days in the refrigerator and are enjoyable cold or reheated.

Smoky tofu fritters (a work in progress)

Technically, I should make these fritters again before posting them. Whilst they tasted great, the texture needs refining - in my version, they struggled to hold together and were a challenge to keep as discrete fritters (as opposed to a messy scramble)! However, I have no idea when I might get to making them again, and they seem too good to skip over altogether. Thus, I post them with ideas for modifications, and a warning as to their messiness in this version. I'm not giving a printable version of the recipe either, to encourage you to make changes if you choose to try them out.
